Slow Cooker Southern Chicken and Biscuits
Is there anything more Southern than chicken? I know I’m on a mission to eat more veggies and less meat, but chicken is my weakness. Fried Southern chicken, baked chicken, spicy chicken – you name it, I love it. But my favorite way to eat chicken is any time it makes its way into some good old Southern comfort food.
Which is why this Southern Chicken and Biscuits recipe is RIGHT up my alley! I don’t know if y’all have noticed, but the weather is changing just a bit. It’s at that weird yo-yo stage where you need to wear a sweater in the morning, but you have to take it off because you’re boiling during the day, but then if you forget it at work you’re freezing when you go out that night. Yeah, it’s that kind of weather.
The good thing about that is that it’s usually cool just in time for dinner, so you can make all of your favorite fall meals without worrying about sweating over your bowl of soup. One of my favorite comfort foods is chicken pot pie, as evidenced by that time I made it into a soup version. This… is basically another way to make a deconstructed pot pie. Fine, I’ll admit that. But THIS version has biscuits. Is there anything better than Southern chicken and biscuits? I think you’d be hard-pressed to find something more warming and comforting.
Because of that, this is the perfect dish for these rainy and chilly nights that we’re getting now thanks to the remnants of Hurricane Irma floating up towards us. While the rain can be a bit dull, we’re really fortunate that it’s just a light rain that we’re getting. Parts of Florida and the Caribbean were devastated by the storm, and rebuilding is going to take a lot of time and work. The newly homeless need to be fed while they rebuild, as do the rescue workers and volunteers helping them through the process. Maybe through food, we can all work to make the world a better place for those who are hurting.
